tuna salad taverna


This recipe is from my Aunt Ann, oh how I love it and wish I wasn't allergic to feta!

1/2 lb spiral noodles (tri color)
1/3 cup olive oil
3 tbs lemon juice
1 clove garlic minced
1/2 tsp tabasco sauce
1/2 tsp anise seed or fennel
1/4 tso salt
1/2 lb feta cheese crumbled or 1 cup ricotta or cottage cheese
1 can tuna, drained
2 tomatoes chopped coarsely
1/2 cup sliced black olives
1/4 cup chopped fresh parsley or 2 tbs dried
1/4 cup pine nuts or slivered almonds

1. Cook pasta according to package directions. Drain and let cool. In large bowl combine olive oil, lemon juice, garlic, tabasco, anise, and salt. Whisk together.

2. In same bowl, combine pasta, feta, tuna, tomatoes, and olives. Toss to coat in dressing. Sprinkle with parsley and nuts.
