mayo free potato salad

Get some potatoes, perhaps two large per grown person (though I've been seen eating like 5 by myself, easily. What can I say, I love the 'taters) Boil, peel if they aren't organic.
Let cool a little bit, when the potatoes cool chop some either red onions or half a leek. Drizzle some olive oil and balsamic vinegar in a bowl. Add a teaspoon or two of dijon mustard, or other mustard if you prefer. Some salt and peppar is good too! And it's lovely with some chopped up bell peppers, or carrots, or cucumber in too, to give it some crunch.
