Coconut Macaroons

Coconut Macaroons


3 cups flaked, sweetened coconut
3/4 cup sugar
4 large egg whites
1/4 tsp. salt
1 tsp. vanilla extract


Preheat oven to 325. Line two cookie sheets with parchment paper.
In a large bowl, stir all ingredients together until well combined.
Drop large spoonfuls of batter on cookie sheets. Bake until firm and lightly golden, 15 to 20 minutes. Rotate cookie sheets half way through. Cool on wire racks. Makes about 30 cookies.
