Chicken Chow Mein


1 Tbs oil
1 1/2lbs boneless, skinless chicken breasts, cubed
4 large carrots, sliced on the diagonal
4 green onions, sliced, green and white parts
3 stalks celery, sliced on the diagonal
1 cup chicken broth
1 Tbs sugar
1/3 cup soy sauce
1/4 tsp red pepper flakes
1/4 tsp ginger
2 cloves garlic, minced
8 oz bean sprouts
1 can sliced water chestnuts, 8oz
1/4 cup corn starch
1/2 cup water

1. Heat oil in large skillet. Cook chicken until browned. Place in crockpot with all ingredients except corn starch and water. Stir. Cook on low for 6 ot 8 hours.
2. Last half our of cooking, turn to high. Mix the water and cornstarch together and add to crockpot. Stir well. Cook until thickened. Serve over rice or with chow mein noodles.
