perfect protein salad

I always add more dill because I love dill.

Perfect Protein Salad
3/4 cup of raw soybeans
3/4 cup of raw wheat berries
1 cup of cottage cheese

Marinade:
1/2 cup of cider vinegar
1/2 cup of mayonnaise
2 tablespoons of dry white wine
juice of 1 lemon or lime
2 cloves of garlic, crushed
1 teaspoon of fresh dill
1/4 teaspoon of dry mustard
1/2 cup of freshly chopped parsley
dash of basil
salt and pepper to taste

1 scallion, diced
1 carrot, diced
1 cucumber, seeded and diced
1/2 red onion, diced
1 bell pepper, diced
1 tomato, seeded and diced

Soak the soybeans overnight. Drain and rinse. Cook soybeans and wheat berries in boiling water (like you would cook beans) until tender (could take as long as 2 hours - the recipe says to cook them together but i always do it in two pots in case they cook at different speeds), then add them to the marinade and chill the mixture. Add the diced vegetables, and then combine everything with the cottage cheese.
