wedge salad with blue cheese dressing

Oh, I think everybody but me are over these, but I can't help it! This salad makes me happy!

-1 head iceberg lettuce, cut into fouths (wash and clean) but leave in the wedge (do not seperate the leaves)
-Chop up some tomatoes and sprinkle on plate, along with the wedge

Dressing:
-4 oz Blue Cheese
I eyeball the ingredients, and add more to taste, so these are approximations:
-1- 2 tablespoon Champagne vinegar (rice wine or sherry can be used as subsitutes, but the champagne is better)
-1 tablespoon quality mustard
-1 tablespoon olive oil
-1/4 cup milk
-salt & pepper to taste
Put all ingredients in blender, but keep a few 'crumbles' of cheese out, sprinkle these on the tomatoes. Add all ingredients to blender, blend. Taste, pour on wedge and enjoy.
