Koringslaai (grain salad)

(Side dish for 8)

- 2 1/2 cups whole grain kernels, parboiled (you can use orzo or another type of easily available parboiled grain. I use tarly)
- 1 large yellow and 1 large red bellpepper, chopped
- 3 large tomatoes, seeds removed and chopped
- 1 onion or 3 spring onions, chopped
- 1 c corn, cooked
- 1/2 c mayonnaisse (or, my variation: mixture of 1/4 cup mayo and 1/4 c low fat yoghurt)
- salt, pepper, etc.

optional (my additions):
- small clove garlic, chopped
- 1/4 cucumber, deseeded and chopped
- 2 stalks celery or 1 small fennel, chopped
- 1/2 mild chili, chopped
- 1 handful parsley or cilantro chopped

Cook grain according to directions on packet and allow to cool.
Stir in vegetables and mayo (or yoghurt), salt and pepper to taste and the herbs.
