balsamic dressing

To go with Panzanella and Caprician salads (also great with simple pasta salads with tuna and peppers)

For the dressing:
- 1/2 cup olive oil
- 1/3 cup balsamic vinegar
- 2 cloves garlic, chopped
- salt, pepper, sugar

Whisk the balsamic with the garlic and then gradually whisk in the oil, 1 T at a time, so that you get a smooth emulsion. Add about 1/2 T sugar and salt, pepper and more sugar to taste.
Allow to sit for a few minutes to let the flavour develops and add extra garlic, salt, pepper or sugar. The longer it sits, the stronger the garlic flavour will be, so if you make it the day before, you might want to start with only one garlic clove.
