Sicilian Panzanella (day-old bread salad)

- 1 loaf of STALE ciabatta cut into chunks (you may fake it by thickly slicing the ciabatta and drying it in a low oven until it resembles very stale bread)
- 3 or 4 tomatoes, cut into chunks
- 1 cucumber, seed removed and cut into chunks
- 1 red onion, sliced thinly
- 1 yellow pepper, cut into chunks
- 1 portion Balsamic dressing
- 1 small handfull basil leaves, torn up

Mix all ingredients in a bowl and pour over the dressing. Allow to sit fot at least 15 minutes to let the flavour develop and to soften the bread.
Optional extra ingredients: some mozzerella cheese, olives, anchovies, tuna, capers, italian sausage, etc. etc. etc.
