grilled chicken summer salad
from pretending sanity
This is great on hot summer days when you're looking for a whole meal that's light yet filling.
grilled chicken breasts (1 per person)
bow tie pasta, cooked according to package directions and cooled (1 1/2 oz uncooked per person)
green leaf lettuce or baby spinach
balsamic vinaigrette
grape tomatoes
Layer pasta and sliced, grilled chicken over a bed of greens. Sprinkle with grape tomatoes and top with dressing.
