Spinach Strawberry Salad
from Beverly Here's a recipe from my friend Janet. She's a great cook, and this is always a hit when I make it. The recipe makes a lot of dressing, which I just savor over my regular salads for a few weeks.
Dressing:
½ Cup sugar
1 Tbl. poppy seeds
2 tsp. sesame seeds
1 ½ tsp. minced onion
¼ tsp. Paprika
¼ Cup cider vinegar
¼ Cup wine vinegar
½ Cup salad oil (do not use olive oil)
¾ Cup sliced almonds
1 lb. Spinach
1 pint Strawberries
2 Tbl. butter
Mix dressing ingredients together and whisk to combine. In a small skillet, melt the butter and sauté the almonds until lightly browned (or toast almonds dry in oven without the butter). Combine the strawberries, almonds, and spinach in a large salad bowl. Pour on dressing lightly (do not use all of dressing). Toss and serve.
