white mountain frosting
1/2 cup sugar
1/4 cup light corn syrup
2 Tbs. water
3 egg whites
1 tsp. vanilla
Combine sugar, corn syrup and water in a medium saucepan. Boil until it syrup spins an eight inch thread (about 242° to 250°). Meanwhile, in an electric mixer, beat egg whites until stiff peaks form.
When syrup is ready, pour in a slow steady stream into egg whites with mixer running. Beat until frosting is thick and glossy and holds its shape, about 7 minutes. Mix in vanilla.
Use immediately, frosting will only last one day.
As you can see, rabbits and kids both love it!
