Grandmas Chocolate Cake


2/3 cup butter
1 cup sugar
1 cup brown sugar
2 eggs
1 tsp. vanilla
3 cups flour
2 tsp. baking soda
1/2 tsp. salt
1/2 cup cocoa powder (Hersheys is good)
1 cup buttermilk
1 cup boiling water


1. Preheat oven to 350°. Grease two 8” cake pans, line the bottom with parchment paper, grease parchment paper, and dust pan with flour. (This recipe will make a half sheet cake as well.)
2. In electric mixer fitted with wire whips, cream butter and sugar. Beat in eggs untill creamy and fluffy. Add vanilla. In separate bowl, sift together the flour, baking soda, salt, and cocoa powder. (Sifting is important, you can’t skip this!)
3. With mixer on low speed, incorporate into the butter mixture the flour mixture and buttermilk, alternating the two. When the flour mixure and butter milk is well incorporated, mix in the boiling water.
4. Divide evenly between cake pans, and bake just untill a cake tester inserted in the middle of cake comes out clean, about 20-30 minutes. (You don’t want to over bake, the cake will be dry.)
