Baked Spaghetti

The sauce is a combination of homemade sauce and store bought, but you could totally substitute store bought.

2 Tbs olive oil
1 medium onion, chopped
3 garlic cloves, minced
1 tsp oregano
1 28oz can chopped tomaotes
1 16oz can spagetti sauce
1 lb spaghetti
1 1/2 cups mozzarella cheese, shredded
green olives, capers or marinated artichokes, your preference, to taste
1 bell pepper chopped
1 lb ground beef or italian sausage, browned or frozen meatballs slightly thawed or sliced smoked sausage.

1. Preheat oven to 425. Heat oil over medium heat. Add onion and garlic. Cook until onion is translucent. Add oregano, sauce and tomatoes. Cook until sauce is thickend about 10 minutes. Season with salt as needed.
2. Meanwhile, cook spagetti al dente. Drain pasta and divide between two 8x8 baking pans. Top with meat.
3. Add bell pepper and olives/capers/artichokes to sauce. Pour over pasta and top with cheese. Bake until golden brown, about 20 to 25 minutes. May freeze one of the baking pans, thaw completely before cooking.
