Tuna Casserole


2 cups elbow macaroni
5 Tbs butter
1 cup celery, chopped (optional)
1 small onion, chopped
2 cloves garlic, minced
6 Tbs flour
1/2 tsp dry mustard (optional)
1 1/2 cups milk
1 1/2 cups chicken broth
1 12oz can tuna, drained
1 1/2 cup shredded motzerella or swiss cheese
1 cup frozen green beans

1. Preheat oven to 375. Cook noodles and drain. Set aside.
2. Meanwhile, melt butter, add onion, celery and garlic. Cook until softened. Stir in flour and mustard if using. Slowly wisk in milk and broth. Cook until slightly thickened and bubbly. Combine sauce, noodles, tuna and green beans. Divide between two 8x8 baking pans. Top with cheese. Bake, uncovered, for 20 minutes or until bubbly. May freeze one pan, thaw completely before baking.
