Spicy Shredded Beef


You only need to buy 1 can of chipotles in adobe sauce and you can use the one chile and the sauce from it.

2 1/2 to 3 lb Beef roast
1 can crushed tomatoes 28 oz
1 can chopped tomatoes 14.5 oz
1 Tbs tomato paste
1 Tbs adobo sauce
1 chipotle pepper in adobo sauce, minced
1 onion, chopped
2 bay leaves
1 tsp oregano
2 tsp salt
1/2 tsp pepper

In a 5 quart crockpot, combine all ingredients, being sure to coat the roast. Cook on high for 6 hours or low for 9 hours.

Shred meat and toss with sauce (I keep the sauce on the side because it's spicy for the kiddos.) Remember to remove the bay leaves from sauce.

Serve warm with tortillas and/or rice. Top with cheese and sour cream.
