antipasto salad


Oh, yum, just thinking about this recipe makes me crave it. It's great to make ahead and then back in containers to take for lunch.

1 jar marinated artichoke hearts, drained (I use the larger size jar)
1 bell pepper, thinly sliced
1 small red onion, thinly sliced
1 small jar green olives, drained - about 1 cup
1 package turkey pepperoni
2 cups cherry tomatoes
2-3 cups small cauliflower florets
1/4 cup red wine vinegar
1/2 tsp cracked black pepper
6 Tbs. olive oil

Combine all ingredients and enjoy!! You may add feta cheese, but I think it's great without it.
