mandarin almond salad


This is such a good salad, the balance between sweet and sour is perfect.

1 Tbs sugar
1/4 cup vegetable oil
2 Tbs vinegar
1/2 tsp salt
1/8 tsp pepper
1/8 tsp tabasco sauce
1/2 cup slivered almonds
1 bunch leaf lettuce, washed, dried and torn
1 11 oz can mandarin orange segments, drained
1 small red onion, sliced

1. In a small skillet, dry roast the almonds until they are fragrant and starting to brown. Watch them carefully because they will burn quickly.
2. In a small bowl, combine sugar, vinegar, oil, salt, pepper and tabasco.
3. Combine lettuce, oranges, onion and almonds in a large bowl. Before serving, toss with dressing.
