spinach salad with warm turkey and pine nuts

It's a 'warm' salad, so everything should be warm, but not hot as hot will wilt your lettuce.

Red onion, sliced
Pine nuts
Olive oil, halved
Red Wine Vinegar
Spices (any spices you like, I use oregano, basil and thyme)
Salt and pepper (to taste)
Spinach leaves or fancy baby lettuce mix like argula, etc.
Feta
Cooked sundried tomato turkey (really, any protein would work - this is what I had left over, it was from a pre-cooked turkey breast Maple Leaf Roast package)

1. Put oil in bottom of pan and cook onions until translucent.
2. Add pine nuts and saute until golden. Cool mixture a bit.
3. While onions are cooking, blend olive oil, vinegar, spices, salt and pepper together in a bowl. Whip with fork.
4. Pour dressing over spinach or lettuce and mix throughly, until leaves are glistening.
5. Heat up turkey in microwave - about 1 minute on high. Slice turkey into strips.
6. Place slightly cooled pine nuts and onions over lettuce. Crumble feta over salad and lay the turkey strips on top of everything.
7. Serve and enjoy!
