sour cream potato salad
from pretending sanity
Considering my absolute hatred for mayo, I can't say how thrilled I was when I found a potato salad recipe that doesn't call for the stuff. This is a really great recipe reminiscent of a baked potato.
2 lbs potatoes, peeled and cubed
salt and pepper
1 cup sour cream
1/2 cup sliced scallions
Boil potatoes until tender. Drain well. In large bowl combine sour cream and warm potatoes. Season with salt and pepper.
Cover and refrigerate at least 1 hour.
Fold in scallions just before serving.
Serves 4
