Penne with Sausage and Tomatoes


1 package smoked fully cooked Turkey Sausage
1/2 cup beef broth
1 zucchini, cut in half lengthwise then sliced into 1/4" slices
2 cups grape tomatoes, halved lengthwise
1 Tbs Italian seasoning
1/4 tsp red pepper flakes +/-
1/2 red onion, diced
1 clove garlic, minced
1 tsp dried basil
1 lb. penne pasta
2 Tbs olive oil

1. Cut sausage on the diagonal in 1/4" slices. Heat large skillet, add assuage, onion, red pepper, garlic and red pepper flakes. Cook until sausage is slightly browned. Add beef broth. Cover and cook over medium heat for 5 minutes. In the meantime cook and drain pasta. Stir in the olive oil.
2. Stir in zucchini, tomatoes and basil. Heat to boiling. Reduce heat and cover. Simmer for 5 minutes.
3. Stir sausage mixture into the pasta. Serve with parmesan cheese.
