white bean and bell pepper salad


from knitwitless

1 can rinsed white beans
2 chopped peppers (I like red and orange)
fresh spinach leaves, washed and dried

dressed with
a juiced lemon
a splash of olive oil
a clove of minced garlic
a pinch of kosher salt
and freshly ground black pepper

Let the beans marinate in the dressing and serve them with a slotted spoon, reserving some of the dressing for the spinach.

Served over a bed of spinach that has been tossed with salt and pepper.
