Year in Review 2012

(I’ve been doing this since 2005.)

2012 in a nutshell: Life and more life. or All of the things. or The year I got addicted to caffeine. or I became a football fan.

Heart
I’m not quite sure how many times I wrote in my journal, THIS is the final step in my transformation. At this point, I’m pretty sure that there isn’t a “final step” and that I’ll always be changing and growing. But 2012 saw lots of steps for sure. 2012 was, for me, about being alive. I got to live more life and experience more things in this year than I had in the previous 5 years. This was the year where I started really dating, quite a bit, having so much fun and a little heartbreak too. I fell in love (a couple of times) and started to see what I actually had been missing all of those years prior. I got to answer some big questions about what I wanted for my future and started to hope that I could have all of the things I couldn’t ever imagine for myself, but my friends promised me were out there. I very solidly reveled in my second chances, knowing that I was rescued from SO very much. Also, I learned to be content with where I was rather than hope for what was to come.

2012 was also about community. I got to walk through some very significant things with several of my friends. It was good to be the person giving instead of the person needing. We saw the expansion of our little community, welcoming some bright and shining people who have added so much. I realize over and over again how special this group of people is and how very loved I am. And so safe.

Looking back, I can say that 2012 was the happiest year of my life.

Kids
celebrated Easter for the first time
• Went to church camp. It was Honor’s first time.
• took Dexter to compete in the Wiener dog races. He lost.
• adopted a pet black widow for a couple of days
• went to Denver on the train for our Christmas Break get-away.
• moved into (part-time) a house with their dad and his girlfriend and took a lot of comfort in the stability it provided
• learned how to paddle the ducky when we were camping at Reudi Reservoir

Eden
• recorded the silliest song with her dad
• turned 10 years old
• spent an evening in the ER getting staples in her head
• ran a 5k with Girls on the Run
• was rewarded with a pet snake for keeping her room clean for an entire month.
• experienced true loss when the pet snake died
• graduated 4th grade and started 5th
• got a pet rat to replace the snake. Then got another pet rat to keep the first company. Penny and Paris respectively.
• played basketball

Honor
• wrote some poems
• also became a football fan
• graduated 2nd grade and started 3rd
• turned 9
• got really good a building legos
• also playing Mindcraft
• had a hard time adjusting to the changes in his life
• got a best friend

Me
• became a football fan
• sewed 2 quilts
• was in a commercial that Seth filmed for the church
• started to learn to fly fish
• discovered beer-garitas
• helped Seth direct a commercial for Pollux
• Got away with Amy, Rickelle and Carrie for a life-changing retreat in the mountains.
• judged the “Heritage Arts” section of the Mesa County Fair for 4H
turned 31 with a huge party in my backyard
• went away to the mountains for the weekend on a retreat with the church staff
• went to my first Broncos game with Brooke and watched the Raiders LOOSE!
• celebrated the 1 year anniversary of being divorced.
• went away with a bunch of friends to Powderhorn for the weekend to “help” Seth shoot a promotional video.
• participated in, and won, the 21 day challenge. Lost 7lbs in the process.
• got a boyfriend. The first since I was 18.
• painted the windows for the church’s upcoming coffee shop
• learned to snowboard

Tangle
• got a letter from our Senator thanking us for our hats for the troops project.
• sponsored Knit on the Corner for the third year
• had some pretty epic windows
• turned 6 years old
• celebrated the end of the year with 15 teachers and staff!

Community

• began a badminton league which consumed many of our evenings and weekends until it got too cold
• instituted Football in the Garage, moving my TV to Caleb and Rickelle’s wood stove-heated garage every game so we can all watch together
• said goodbye to Seth and Carrie when they moved to Ft. Collins and hello to them when they got pregnant and decided to move back home
• did dreamboards with the girls

House
front steps got a new coat of paint
• gave the backyard a total makeover, installing a path, lots of wood chips and contributing a large pile to the City’s landfill
• planted a garden
• rearranged my room for a new bed

Good Samaritan Clinic
• consumed a large part of my life as we got it running smoothly and on the road to financial sustainability
• moved into a new home which required an intense week of set-up and organization.
• I became the Director of the clinic in August.
• operated one free clinic a month.
• introduced a video that Seth made about the clinic to the city.
• ran multiple fundraisers each month: farmers market booths, concerts, hot chocolate booths, donation boxes, church presentations
• launched a partnership program designed to create financial sustainability
• passed the 500 patient mark

mini mountain escape

Earlier in December, Josh and I got to play hookie for a day and escape to Ouray, which might possibly be my favorite Colorado mountain town. I love that I live so close to so many amazing places. We swam in the hot springs, ate delicious Irish food and hung out at Mouse’s the most amazing place to get dark chocolate salted caramels (also coffee). I just can’t get over how much I love winter and the snow and I was overjoyed that it snowed the entire time we were there. And even though Josh doesn’t agree with me about the amazingness of winter, I think that I’m going to win him over at some point.

21 day challenge

Edit 11/14: Here’s a pinterest board I started with recipe ideas. Some of the recipes need to be tweaked to fit within the challenge guidelines, but they are good ideas!

 

Back in November I participated in a mandatory 21 day challenge along with all of the other ladies my trainer trains. I had a hard time wrapping my head around the challenge because it meant giving up half and half in my coffee and diet coke. But once I signed the contract, I was COMMITTED. In fact, there were several times that I was peer-pressured to have a beer or some other treat and when I referred back to the fact that I had signed a contract, my friends gave me quite the hard time. That was until I started losing weight. In those three weeks I lost 7lbs, 2% body fat and about 1.5″. I ended up winning the challenge, losing the most percentage of weight out of all of the other participants which landed me a free month of training, just in time for the holidays.

So many people were so impressed by my results that I agreed to do the challenge again with them in January. We started today and I wanted to give a little bit more information for those who might want to join us.

The 21 day challenge is about clean eating, low fats and no sugar. Clean eating is basically eating only whole foods, nothing processed. On the challenge we also cut out high fats, so no high fat cheeses, butter or cream. The only oil you can use is olive. Also no sugars or artificial sweeteners except Stevia and Splenda. I don’t like Splenda because it really bothers my stomach, also I feel that it’s too processed so I don’t use it. No fruit juices, no simple carbohydrates like white breads or crackers, no chips unless they are baked and have simple ingredients like corn and oil, etc. Also, high starch foods like white potatoes should be limited. High quality granola is definitely a whole food, but because it’s sweetened, it should be avoided too. No bottled salad dressings. Homemade vinegrette would be great or oil and vinegar if you’re out.

What you can eat:

Any vegetable you can imagine including avocados which are good fats.
Any fruit: I like to eat dried fruits when I’m craving sweets.
Whole grains: So 100% whole wheat breads, just make sure they aren’t sweetened with high fructose corn syrup. Brown rice, whole oats and corn is a whole grain so you can have corn tortillas and baked Tostitos. Triscuits are a great cracker with only 3 ingredients if you eat wheat. Any other whole grain like barley, quinoa, millet, etc.
Lean dairy: Greek yogurt is your friend! Fage 2% plain yogurt only has 150 calories and 20 grams of protein. When I eat Greek yogurt for breakfast, I don’t crave carbs for the rest of the day… it’s amazing. Low-fat cheeses like motzarella and queso fresco. Low-fat milk, cottage and ricotta cheeses.
Lean meats: I’ve found that if I load up on protein, I can totally do this diet. Grilled chicken breasts, lean pork, ground turkey even lean ground beef. And lots of fish steamed, baked or grilled.
Nuts: Nuts are pretty high in calories so it’s not the best idea to eat tons and tons of them. But a handful of nuts with some dried fruit is a great snack in the middle of the day. You can also eat natural peanut butter. Natural as in no added sugars or oils. I’m not a huge fan of natural peanut butter so I opt for almond butter which is amazing with apples.
Eggs

What I eat:
*Lots of veggies and hummus.
*baked tortilla chips and salsa. Vitamin Cottage has this amazing black been dip that’s by the hummus that’s low cal and great with baked tortilla chips. I treated myself a couple of times to baked potato chips too. I just made sure and get the plain chips rather than something flavored.
*Brown rice cakes (Lundberg brand) and almond butter or melted queso fresco.
*Dried fruit and nuts.
*brown rice crackers and queso fresco or almond butter or with lunch meat.
*plain Greek yogurt (I don’t mind plain, but it’s pretty good with some frozen berries mixed in.)
*Spinach shakes: spinach, Greek yogurt, berries, frozen banana.
*Grilled chicken or fish or pork tenderloin with lots of veggies on the side. Braised greens like collards or chard are amazing!
*Baked sweet potato fries. Peel, slice, brush with olive oil and bake until tender and a little crispy. These are great with a whole-grain mustard.
*Lots of tacos. Fish tacos, lean beef tacos, breakfast tacos. Whenever I go out to eat, I try to eat places like Cafe Rio or Chipotle where I can choose what’s on my food. If you skip the cheese and sour cream and make sure you get un-fried corn tortillas, tacos are a great choice. Also the pork tacos at Bin 707 are delish if you find yourself there.
*Burgers without the bun. Because I try to eat gluten-free, this is something I do anyway. But when you’re at a restaurant and faced with another boring grilled chicken salad, a bun-less burger is a great option. (Of course if they had 100% whole wheat buns, that would fit in the challenge.) Just make sure to avoid high-fat toppings like bacon, mayo or cheese. Instead of fries for your side, try a side salad with oil and vinegar or cottage cheese or fruit.
*Club soda when I crave Diet Coke. Or unsweetened iced tea helps sometimes too.
*Fruit: Apples with almond butter. Dried mangos, dried bananas, dried apples. Clementines.
*Frozen banana shakes – just a frozen banana, low-fat milk or almond milk, handful of berries, blend. It’s the consistency of ice cream.
*Popcorn popped with a little bit of olive oil and kosher salt. I have a Stir-Crazy popcorn maker which makes the very best popped corn.
*Chili. This is a good option if you find yourself at a restaurant without many choices. I love to make it with lean ground beef (turkey would be great too), rotel tomatoes, lots of beans, bell peppers, onions, corn and lots of spices.
*Eggs. Hard-boiled, fried with a tiny bit of olive oil, scrambled and folded up in a corn tortilla with some queso fresco and green chiles for breakfast tacos.

If you decide to do the challenge, make sure you weigh yourself before you start! I think you’ll be surprised at what happens! I sure was!

to Denver on the train

Our big Christmas-break activity this year was to ride the train to Denver. We worked it out so that Josh was able to ride back with us. The kids loved the trip and did really well considering it was 8 hours. We spent some time in the observation car (which is my favorite) playing games and having lunch before we headed back to our seats. I also love the train as a method of travel through the Rockies as it’s SO relaxing without the stress of navigating the passes in the winter… also they serve beer.

While in Denver we got to see my sister and the twins who just turned 3. Also their new puppy, an 8 week old Border Collie named Chancho after a charachter from Nacho Libre. We also ate at some great restaurants, shopped for our Christmas presents from Josh (for the kids it was a trip to Build-a-Bear and for me it was a shopping spree at Anthropologie in leiu of the gift he ordered me from Anthro that was backordered). And we went to the Denver Aquarium which was AMAZING! Honor especially enjoyed it as he currently wants to be an Aquarist when he grows up.

I’m pretty in love with the pictures I got from the train and also the one’s from the aquarium. It’s amazing what an iPhone 5 can do.

Christmas 2012

This Christmas was the craziest holiday season I’ve had yet. We had four fundraisers for the Good Samaritan Clinic in the month of December on top of it being Tangle’s busy season. I got a flu shot that made me sick for the second half of the month (one sickness after another) and we also celebrated with some amazing parties, including a party at my house for the clinic volunteers, Amy’s fifth annual epic Christmas party and a party for our employees at Tangle. Josh was back and forth between here and Denver so he could participate in all the fun with us and was here to celebrate Christmas too. We had Christmas Eve at my Aunts house and we got to celebrate with my cousin’s husband who was home from the Air Force for the first time since he left in June for bootcamp. My other cousin was also home from college. Alyssa and Scott will be stationed in Florida next year so there was definitely a sense that this was the last year of normality.

Christmas was at my house this year which was decorated for the first time ever. We sort of had a progressive Christmas starting with stockings. I made the kids wait for my mom to arrive to open presents and then Meghan, Jim’s girlfriend, stopped by with more presents for the kids before we ate breakfast. Josh made amazing gravy for my biscuits which was the first time I’ve ever had biscuits and gravy (I’m definitely a fan) and of course there was bacon, eggs and my mom’s cinnamon rolls. Seth and Carrie stopped by after breakfast to exchange more gifts and then my dad came for Christmas dinner which was steak, shrimp, mashed potatoes and gravy (the best I’ve ever made) and crispy brussel sprouts with bacon.

I would definitely say a fun time was had by all. And I just resolve to 1. not be sick next year and 2. relax more!
